Chicken in Adobo Sauce

If you’re a fan of chipotle peppers then this dish is for you. If you are entertaining a large crowd, it can be made ahead of time and stored refrigerated until it is time to eat.
Ingredients:
Serves 2
2 medium chicken breasts, diced
1/2 white onion, chopped
2 garlic cloves. minced
1 tomato, diced
1/4 cup fresh cilantro
3 tbsp, fresh oregano
1-2 chipotle peppers in adobo sauce, chopped, plus 1 tbsp. of adobo sauce
1/4 cups dry, white wine
2 tbsp. cooking oil
salt and pepper to taste
Serve over white rice
Season chicken with salt and pepper. In a large frying pan, add 2 tbsp of cooking oil and add chicken. Cook 10 minutes stirring occasionally.
Add onion, garlic, and tomato and saute until chicken has cooked and vegetables are soft
Deglaze pan with the 1/4 cup of wine and simmer until reduced by half
Add chopped chipotle peppers, adobo sauce, and cilantro. Stir and bring to a simmer.
Stir in fresh oregano
Add salt if needed

Delicious! I doubled the recipe and only added 1 Tbsp of oregano, that is my personal preference. This was really tasty! I will be adding this one to the menu! BTW I grew up in El Paso! Graduated from Eastwood! I miss the mountains! Janelle

I offered to make my husband a burrito out of this mixture the next day and he said he was in a hurry and could not wait. He said all he thought about all day was when he could come home and eat a burrito! I LOVE chile relleno burritios also with some beans in there too! YUM! I guess you know what I will be making alot of!
Of course you gotta have the beans. Now I want one!
