Fideo is a popular soup served as a side or starter for many Mexican dishes but it can also be served as the main course with a flour tortilla or warm bread. It is very easy to make and a comfort food in many households including mine.
serves approx. 4, 3/4 cup servings
1 cup fideo pasta
2 1/2 cups water
1/2 cup tomato sauce
1/4 onion, finely chopped
1 garlic clove, minced
1 small tomato, chopped
handful chopped cilantro
2-3 tablespoons tomato bouillon, according to taste
1/2 tbsp garlic powder
1/2 tbsp olive oil
In a medium pan, add olive oil and sauté onion, garlic, and tomato
Once onion is soft, add fideo and toss until half of the pasta is lightly toasted
Add water, tomato sauce, garlic salt, and tomato bouillon.
Cook over medium heat until the fideo is soft. Stir in cilantro and serve.
